If you have a little child in the house you will love these simple yet versatile cookies. They can be cut into shapes, rolled and iced for children to enjoy.
100 gm sugar, preferably fine granules
100 gm butter (salted will do)
230 gm self-raising flour
1 Teaspoon vanilla or almond essence
3 tablespoons icing sugar
2-3 drops of assorted natural food colour
1 teaspoon of lemon juice
Cream together the butter and sugar till it looks light and fluffy, then add one egg and beat some more. Add the essence.
Add the flour and kneed to a soft dough, wrap it in cling film and refrigerate for 20 mins if you plan to use cookie cutters. Remove from the refrigeration and roll the dough into 1/2 inch thickness. Then use your favorite cutters to cut out shapes. Place them on a baking tray lined with parchment paper. Preheat the oven to 180 degree centigrade.
Beat one egg and keep aside to give the cookies an egg-wash. Place in the oven for 20 mins on 180 degrees. Remove once at 10 mins to lightly brush with beaten egg. Your cookies are done when they turn golden brown.
To make the icing. Mix food color, a teaspoon of lemon juice into icing sugar. Coat the cookies while still warm so that the icing sets when the cookies have cooled.
